Tuscan Sausage Soup

2 pounds Martins Chicken and Broccili Rabe Sausage
¼ cup of olive oil
10 cups of stock (vegetable, chicken, beef)
1 can of Beans
salt and pepper
2 c Swiss Chard
small can of plum or diced tomato

2 pounds of Martin’s Chicken and Broccoli Rabe Sausage
cooked in a pan with splash of oil and 1 1/2c water
covered and cooked for about 20 minutes
Reserve water/broth for soup

Remove Sausage and cut into small pieces
1 bulb fennel sauteed in a separate pan with
1 t Salt
1 t Pepper
1 T Garlic chopped
2 T Olive Oil

Add cooked fennel to pot with sausage water,
add can of Carmelina or Rienzi Brand: cannelini, butter or chick pea beans (reserve bean liquid)
Add 2 cans of water

Add all ingredients to pot cook on medium to low and right before serving toss in 2 c chopped or swiss chard, kale or greens You can also add a few diced tomatoes or whole plum tomatoes
